The fruit from Stonefish Wines is sourced from several premium grape growing regions to ensure that all of the Stonefish varietals showcase the best qualities that Australian vineyards have to offer. Such regions include the beautiful Barossa Valley, McLaren Vale, the Hunter Valley and Margaret River.

stonefish_vineyardEach grape that is used in the Stonefish range are treated in a certain way to ensure we recreate our trademark style, each vintage. The fruit that is used for our white wines are handpicked and transferred to our wineries immediately to reduce the risk of damage and to maximise the fresh and lively fruit characters. Most whites are fermented in stainless steel, under pressure controlled conditions and where appropriate, selected parcels of white wine are fermented and/or matured in French Oak barriques, to provide an added dimension of complexity.

Fermentation of all of our red wines is carried out in 5 tonne open fermenters under controlled temperature conditions to ensure tremendous varietal characters, excellent balance in complexity, subtle oak and a lovely soft tannin finish.

Our modern and innovative wineries utilise technologically-advanced equipment which allows our producers to create outstanding wine, as well as produce over 100000 cases per annum.
